Bikini Recipe

Makes enough for 10 people

For the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Drink (produces 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Citrus Syrup: Put the listed ingredients into a pot, heat until it reaches a light boil, stirring so the sugar melts. Next, remove from the heat allowing it to reach room temperature entirely. Transfer into an sealable bottle, seal and refrigerate it in the fridge, where it will keep for about four weeks.

Preparing the Cocktail Base: Pour all the liquids into a sizeable container, let it rest for one hour, then filter it best through a fine cloth, so it's perfectly clear.

To serve: Measure 85ml of the cocktail base to a cocktail shaker containing ice, and agitate gently for a minute to chill. Pour to a chilled martini glass or similar, top with a few cranberries and finish by giving it a quick spritz of mandarin oil above the glass.
